I love soup but finding a creamy soup when you have a dairy allergy like I do can sometimes be difficult. I think what I enjoy most about this recipe is that not only is it a dairy free recipe, but it is dairy free on its own without having to substitute dairy free products for dairy products!
Frugal Tips For This Tex Mex Corn Chowder Soup Recipe
This is a great soup to freeze for later. I have completely cooked it and then froze it and I have just thrown all the ingredients together and froze it to be cooked later. Either way it turns out just fine!
*All of my soup recipes can be used with dairy or made into dairy free recipe versions. I have a milk allergy while my husband does not so I often try to make recipes in which substitutions can be made either way. My soup recipes are also made to be as frugal as possible.
Frugal Soup Recipe : Tex Mex Corn Chowder
Gather It Up!
1 can of whole kernel corn (or cut the corn off of two corn cobs) minus the liquid
1 can of creamed corn (if you have a dairy allergy be sure to check the ingredients)
1 can diced tomatoes (I try to use Rotel but if all I have is regular that is what gets used)
1 can kidney or black beans minus the liquid
1 cup chicken broth or 8 chicken broth cubes
1 tbsp garlic powder or 1 clove garlic
1 chicken breast cooked and cubed
Cook It Up!
This one’s pretty easy so I know you’ll like it! Throw everything in a big pot and heat!
Serve It Up!
I don’t generally eat this soup with anything but some crackers. It would be good with a few chicken wings, a salad, or some garlic bread!
