Frugal Soup Recipes : Taco Soup

Taco Soup is a great soup, even for those who don’t really care for soups! It is also excellent to make when you have leftover taco meat. See below recipe for leftover recipe instructions.
Frugal Tips for this Taco Soup Recipe:
Use what you have on hand. I have made several variations of this soup recipe from all kidney beans to no green pepper, I’ve even left the rotel tomatoes completely out several times. You can’t really go wrong!
*All of my soup recipes can be used with dairy or made into dairy free recipe versions. I have a milk allergy while my husband does not so I often try to make recipes in which substitions can be made either way. My soup recipes are also made to be as frugal as possible.
Taco Soup Recipe
Gather It Up!
1 1b ground beef or ground turkey or 1/2 pound ground beef and 1/2 pound ground turkey
1 small onion chopped
1/2 green pepper chopped
2 can beans- 1 can kidney and 1 can black (or soak equivelant of dry as this would be more frugal!)
1 can whole kernel corn with the liquid
1 can rotel tomatoes
2 cups water
1 small can tomato sauce
1 package taco seasoning mix
garlic to taste
Cook It Up!
Brown beef. In a large pot mix all the ingredients together and heat!
What? Did you think this was going to be hard?
Serve It Up!
I like to eat this soup with a dollop of sour cream (dairy free for me!) and the hubby likes to dip tortillas in it.
