Leftovers aren’t just for lunch! You can use them for breakfast too!
Frugal Tips for a Leftover Breakfast Mix ‘a’ Stuff
Use whatever is leftover in your fridge, mashed potatoes, sausage, onion, mushrooms, olives, or whatever you have in there that you would also throw in an omelette.
*All of my breakfast recipes can be used with dairy or made into dairy free recipe versions. I have a milk allergy while my husband does not so I often try to make recipes in which substitutions can be made either way. My breakfast recipes are also made to be as frugal as possible.
Gather It Up!
1 potato chopped (or leftover potatoes or baked potato skins)
1/2 medium onion chopped
2 mushrooms chopped
1/2 cup leftover hominy
2 eggs
Cook It Up!
Fry potato in a small amount of oil. Add whatever leftovers you are using. Push leftovers and potatoes to edges making a circle in the center. Scramble eggs in the center of the pan. Once eggs are scrambled mix everything together.
Serve It Up!
This is great as is or over a piece of buttered toast.
