Frugal Tips for Chickpea and Tuna Salad
While this dish is pretty frugal no matter how you look at it, you can make it even more frugal by purchasing dried chickpeas (also known as garbanzo beans), and soaking them yourself. You can also stretch this meal by adding more romaine lettuce.
*All of my recipes can be used with dairy or made into dairy free recipe versions. I have a milk allergy while my husband does not so I often try to make recipes in which substitutions can be made either way. My recipes are also made to be as frugal as possible.
Tuna and Chickpea Salad
Gather It Up!
One can tuna
One can chickpeas (they are also called garbanzo beans) or two cups if you soaked dry beans
1 green pepper chopped
1/2 onion chopped
2 tbsp olive oil
lemon juice to taste
italian seasoning
romaine lettuce
Cook It Up!
Throw everything but the romaine in a dish and toss. Place dish in fridge while cutting up romaine. Toss tuna and chickpea mixture with romaine.
Serve It Up!
I eat this as is. It is filling enough to be the only thing you eat but it would also work great as the salad before a meal!
