Frugal Mini Shepherd’s Pie for Ramekins

Who doesn’t love finding a recipe that will fit perfectly in those little ramekins? They’re so cute that I just love finding things to cook in them! Shepherd’s Pie is perfect for them and gives each person their own personal pie.
Frugal Tips for Mini Shepherd’s Pie for Ramekins
Shepherd’s Pie doesn’t have to be with lamb though that would be one of the original recipes. Use ground beef or a half and half mixture of ground beef and ground turkey. I even hide a large amount of veggies in the mix to stretch it.
*All of my dinner recipes can be used with dairy or made into dairy free recipe versions. I have a milk allergy while my husband does not so I often try to make recipes in which substitions can be made either way. My dinner recipes are also made to be as frugal as possible.
Mini Shepherd’s Pie for Ramekins
Gather It Up!
4 small ramikens
8 tablespoons Meat Mixture
2 small potatoes made into mashed potatoes
4 tablespoons corn
2 tablespoons butter
1 slice cooked bacon and crumbled
1 green onion chopped
cheese or dairy free cheese
Cook It Up!
Place 2 tablespoons of heated meat mixture in bottom of ramekin. Top with one tablespoon corn and 1/4 tablespoon of butter. Then add 1/4 of mashed potatoes. Spread 1/4 tablespoon of butter on top of mashed potatoes and sprinkle crumbled bacon and green onion on top of Shepherd’s Pie. Sprinkle with cheese or dairy free cheese. Bake at 375 degrees until top cheese is melted.
Serve It Up!
Serve with a salad and some crusty bread for a full meal.

I had no idea what a ramekin was, but I looked it up. Anyway, sounds like a great recipe, but I personally would tend toward the lamb if possible. To me it’s kind of an exotic flavor.
I am definitely going to steal the ramekin idea!! I love the idea of serving little shepherd’s pies (or even pot pies) YUM
