Dairy and Gluten Free Frugal Lasagna

dairy free gluten free lasagna frugalWe love our red sauce and lasagna is one of our favorite ways to get it! I am just glad that I was able to make it both gluten and dairy free so I don’t have to give it up!

Frugal Tips for Dairy and Gluten Free Lasagna

Look for lasagna rice noodles on sale as they aren’t cheap. You may also consider making your lasagna with less layers than you are used to.

Dairy and Gluten Free Frugal Lasagna


Gather It Up!

One box lasagna rice noodles

Homemade Pasta Sauce or Store Bought

Ground beef (brown and mix in pasta sauce)

1 large zucchini (shred it)

Cheese or Dairy Free Cheese

Cook It Up!

Follow the rice noodle box directions to make the rice noodles, I liked to undercook them a bit. Cover bottom of large glass dish with a small amount of pasta sauce. Add lasagna rice noodles to the top. Cover with pasta sauce mixture and add cheese if you are using it. Repeat until you have used all of the noodles. If I am not using cheese I will sometimes top the lasagna with dollops of dairy free cream cheese. Bake at 375 until cheese is browned.

Serve It Up!

Serve lasagna with a large salad, kale chips, or fried potatoes.

    Wow that looks really good. I enjoy it this way and sometimes I like to make it with chicken and thick Alfredo Sauce….OMG! I can’t get enough…:) Well now that I’m hungry again I’m off to get something to eat…..
