We have this a lot on Friday nights. The hubby works a bit late on Fridays so this is an easy meal to make and he can eat whenever he gets home.
Frugal Tips for Turkey Club Sandwich with Homemade Fries
Deli turkey would work just as well but I often buy an already cooked turkey breast that I can easily thaw and slice. Potatoes are a cheap side dish and I try to add in a power packed green, like kale, when its on sale.
*All of my recipes can be used with dairy or made into dairy free recipe versions. I have a milk allergy while my husband does not so I often try to make recipes in which substitutions can be made either way. My recipes are also made to be as frugal as possible.
Turkey Club Sandwich with Homemade Fries
Gather It Up!
1/2 pound turkey breast sliced
bacon or turkey bacon
fresh kale, lettuce, or spinach
sandwich bread (I use Udi gluten free sandwich bread)
tomatoes (there aren’t any in the picture because I can’t eat tomatoes right now)
mayo or mustard
1 potato per person
Cook It Up!
Assemble sandwiches. Slice potatoes. Toss potato slices with oil and layer on a cookie sheet. Bake at 400 degrees until crisp but not burnt, about ten minutes.
Serve It Up!
We have also eaten this with a salad or sweet potato chips.
