Frugal Recipe: Scrambled Eggs and Toast
Scrambled Eggs and Toast

I know. You're thinking you could have figured this out
for yourself. This is true if you only have eggs and
bread. Instead of just eggs and just bread, mix it up a bit.

Heat oven to 325 degrees.

Get out one egg per person. You may think you need
more but you really don't, especially if you add items to
the eggs.

Search you fridge for leftovers. You may find leftover
chopped onion, tomatoes, olives, or sausage from the
night before.

Scramble the eggs then throw in your leftovers.

Butter one side of your bread and set it butter side up on
a cookie sheet. Pile the scrambled egg mixture on top of
the toast and sprinkle lightly with cheese.

Toast in oven until cheese is melted and serve!

For the dairy free - use soy cheese or leave the cheese
off entirely.

For the lazy - Toast the bread in the toaster, toss
scrambled egg mix on top and eat.
